Most supermarket harissa is chilli paste with some cumin. Belazu’s is something else. The rose petals are not decorative; they soften the heat and add a faint floral note that lingers underneath everything else. The chilli burn builds slowly and stays consistent rather than peaking and dropping.

170g goes further than you’d expect. A spoonful into scrambled eggs, stirred through yoghurt as a dip, rubbed under chicken skin before roasting, spread on flatbreads. The paste holds well in the fridge for weeks once opened.

Ottolenghi has used it in recipes for over a decade. The number of chefs who cite it as a pantry essential is long enough to be convincing. At under £5 a jar, there’s no reason not to have one in the fridge permanently.
